The UN AI Resource Hub is a "one-stop-shop" where you can explore UN AI activities across different regions and countries. Both UNESCO, the specialized UN agency promoting quality education; and UNICEF, the United Nations Chlldren's Fund, have done extensive research and created programs devoted to AI and education. The AI for Sustainable Development Academy is a think tank with the goal to promote the positive use of AI for Sustainable Development, and to investigate on the negative impact of AI on Sustainable Development.
